I'm not the best baker in the world, so when I see recipes that anyone can do, with some added shortcuts and help, I definitely seize the opportunity to get creative in the kitchen!
And what better time to get that baker hat on, than a special occasion like halloween?
That's why I decided to make these simple recipes: No Bake Cheesecake and Chocolate Brownies.
NO BAKE CHEESECAKE
-25 digestive/tennis biscuits
-150g melted butter
-2 tablespoons sugar
-675g cream cheese
1 1/2 tins condensed milk
-1/2 cup lemon juice
-1 teaspoon vanilla extract
-Halloween decorations (I used a chocolate button with spiders on)
-Icing pen to decorate
-Crush biscuits in a large ziploc bag with a rolling pin until crumbs are very fine.
- Add the melted butter and sugar and stir well to combine
-Place a square piece of wax paper in a springform pan, to make the cheesecake easy to remove once it's set. Press biscuit mixture firmly into the pan and smooth it until flat.
-chill the biscuit base in the fridge for 10-15 minutes
- Beat cream cheese with an electric mixer until smooth, and beat in the condensed milk a little at a time.
-Add lemon juice and vanilla and mix well.
-Pour the cream cheese filling on to the base and smooth with a spoon/spatula. Cover with cling film and refrigerate for 12 hours.
-Decorate with the icing pen and chocolate button.
And now, literally the easiest recipe to make.
-A box of your favourite store bought chocolate brownie mix
-A bag of marshmallows
-1 cup powdered sugar
-1/2 teaspoon vanilla
-1-2 tablespoons milk
(Mix powdered sugar, vanilla and milk one tablespoon at a time until it can spread. It will set slightly as it sits)
-Mix and bake brownies as per instruction
-Optional: Crush oreo cookies and add to brownie mix before baking.
-Once brownies have cooled in the pan, pour the icing mixture over, and place marshmallows on top.
(Tip: dot each marshmallows' underside with a bit of icing to make it stick)
You can also decorate the marshmallows using an icing pen, or toothpick, like I did to add some fun!
